1.Prep Equipment :Set temp to 350°F / 180°C.

Preheat your oven to 350°F / 180°C and line a large baking sheet with parchment paper or a silicone baking mat.

2.Mix Wet Ingredients :Whisk until smooth.

In a large mixing bowl, whisk together the melted butter, granulated sugar, brown sugar, eggs, and vanilla extract until well combined and smooth.

3.Combine Dry Ingredients :Avoid overmixing.

Sift in the all-purpose flour, cocoa powder, baking soda, and salt. Gently fold the dry ingredients into the wet mixture until just incorporated.

4.Add Chocolate Chips :Fold evenly.

Stir in the semi-sweet chocolate chips using a spatula.

5.Scoop & Bake :Space 2 inches apart.

Scoop the dough into 2-inch balls and place them onto the prepared baking sheet. Bake for 10–12 minutes until the edges are set but the centers remain soft.

Baker’s Tips & Science Insights

Texture Tip: Do not overmix the dough after adding the flour and cocoa powder. Overworking gluten leads to tough, cakey cookies rather than chewy, fudgy brownie centers.

  • Cocoa Quality: Use high-quality Dutch-processed or natural cocoa powder for the richest chocolate flavor profile.

  • Fudgy Center: Remove the cookies from the oven when the centers still look slightly underbaked; they will continue to set as they cool on the baking sheet.
