1.Preheat and Prep Muffin Tin :

Preheat your oven to 350°F / 175°C. Line a 24-cup mini muffin tin with paper liners or grease thoroughly with nonstick cooking spray.

2.Mix Brownie Batter :

In a medium bowl, whisk together melted butter, granulated sugar, eggs, and vanilla extract until smooth. Gradually whisk in cocoa powder, flour, and salt until just combined—do not overmix.

3.Bake Brownie Bases :

Spoon batter into the mini muffin cups, filling each about two-thirds full. Bake for 10 to 12 minutes until centers are set and a toothpick inserted comes out with a few moist crumbs. Allow to cool completely in the tin.

4.Heat-Treat Flour for Cookie Dough :

Spread 1 cup of all-purpose flour on a baking sheet and bake at 350°F / 175°C for 5 minutes (or until temperature reaches 160°F / 71°C) to ensure it is safe for raw consumption. Cool completely.

5.Prepare Cookie Dough Topping :

In a large bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in milk and vanilla extract. Gradually blend in cooled heat-treated flour and salt, then fold in mini chocolate chips.

6.Assemble Bites :

Scoop small portions of cookie dough and gently press a layer onto each cooled brownie bite.

7.Chill and Set :

Refrigerate assembled bites for at least 30 minutes until the cookie dough topping sets. Serve chilled or at room temperature.

Food Science & Storage Insights

Food Safety Note (Raw Flour): Raw flour can carry foodborne pathogens. Heat-treating flour by baking it to 160°F / 71°C breaks down harmful bacteria while preserving the flour’s structural ability to form a thick, creamy cookie dough.

  • Prevent Overbaking: Check the brownie bites at the 10-minute mark. Because mini muffin tins heat quickly, even 2 extra minutes can turn fudgy bite-sized brownies dry.

  • Storage & Freezing: Store in an airtight container in the refrigerator for up to 5 days. For long-term storage, freeze layers separated by parchment paper for up to 3 months; thaw in the fridge before serving.
