1.Bake the Crust :Form the base.

Preheat oven to 350°F / 175°C. Line a baking dish with parchment paper. In a bowl, combine flour, melted butter, and brown sugar until crumbly. Press the mixture firmly into the bottom of the prepared dish and bake for 10 to 12 minutes until lightly golden.

2.Prepare & Bake Cheesecake Layer :Smooth, creamy center layer.

In a bowl, beat softened cream cheese and granulated sugar until smooth. Add eggs one at a time, followed by vanilla extract, mixing just until combined. Pour over the warm baked crust and bake for 20 to 25 minutes until the edges are set and center slightly jiggles.

3.Make Caramel Pecan Layer :Gooey nut topping.

While cheesecake cools slightly, heat caramel sauce or melt soft caramels with a splash of cream until smooth. Fold in pecans until well coated. Gently spread the caramel pecan mixture over the cheesecake layer.

4.Chill & Slice :Firm up for slicing.

Bake for an additional 5 to 8 minutes to set the topping. Remove from oven and let cool completely to room temperature, then refrigerate for at least 3 to 4 hours (or overnight). Lift out using parchment paper and slice into square bars.

Pro-Tips & Storage

Clean Cuts: For sharp, clean squares, use a warm knife dipped in hot water and wiped dry between every single cut.

  • Room Temperature Cream Cheese: Ensure your cream cheese is fully softened before mixing to avoid lumpiness in the cheesecake layer.

  • Storage: Keep stored in an airtight container in the refrigerator for up to 5 days, or freeze individual wrapped bars for up to 1 month.
