Food Science: Date Emulsion & Binding Mechanics
Date-Paste Hydrocolloid Binding: Medjool dates contain high levels of naturally occurring invert sugars (glucose and fructose) along with dietary fiber (pectin). When pureed with plant milk and nut butter lipids, the insoluble fibers swell and form a sticky, hydrocolloid gel matrix. This replaces eggs, gluten, and melted butter, binding the rolled oats securely into a dense, fudgy structure.
Thermal Moisture Setting: Baking for 18–22 minutes at 350°F / 175°C gently dehydrates excess surface moisture and causes the oat starches to swell without drying out the interior. Taking the pan out when the center is slightly soft ensures a fudgy, brown-sugar-like chew once completely cooled.

Storage & Freezing Protocols
-
Refrigeration: Store in an airtight container in the refrigerator for up to 5 to 7 days. Chilling enhances their dense, fudgy texture.
-
Freezing: Freeze individual squares in a single layer separated by parchment paper for up to 2 to 3 months. Thaw at room temperature for 15 minutes before serving.
