1.Blend Cottage Cheese Base :5 minutes.

Transfer 1 cup of cottage cheese into a high-speed blender or food processor. Blend on high for 30 to 60 seconds until completely liquid, smooth, and free of all curds.

2.Whip Lipids and Greek Yogurt :3 minutes.

In a large mixing bowl, combine 8 oz softened cream cheese and 1 cup plain Greek yogurt. Beat with an electric mixer on medium-high speed for 2 minutes until creamy and smooth.

3.Integrate Protein and Flavor Activators :3 minutes.

Add the blended cottage cheese, ½ cup vanilla protein powder, ¼ cup powdered monk fruit sweetener, 1 tsp vanilla extract, 1 tbsp lemon juice, and 1 tsp lemon zest. Beat on medium speed for 2 to 3 minutes until uniform, thick, and fluffy.

4.Fold Volumizer (Optional) :2 minutes.

If using, add ½ cup light whipped topping to the bowl. Use a rubber spatula to fold gently in broad circular motions until incorporated without deflating air pockets.

5.Portion and Chill Set :1 hour.

Spoon or pipe the cheesecake fluff into individual dessert glasses or meal prep containers. Cover tightly and refrigerate for at least 1 hour (or overnight) to allow the protein powders to fully hydrate and set firm.

6.Garnish and Enjoy :Serve.

Top with fresh strawberries, blueberries, or a sprinkle of crushed graham crackers directly before serving cold.

Food Science: Protein Emulsification & Micro-Air Pocket Trap

Blending Cottage Cheese Curds: Cottage cheese consists of solid milk curds (casein aggregates). Processing it in a high-speed blender ruptures these curd structures, transforming it into a silky lipid-protein paste that blends seamlessly into cream cheese without gritty lumps.

Hydrophilic Protein Thickening: Whey and casein protein powders act as hydrocolloids. When whipped into moisture-rich Greek yogurt, the protein molecules absorb free water molecules, causing the mixture to firm up and thicken during the 1-hour chilling phase.

Acid-Treated Dairy Structure: Adding fresh lemon juice lowers the pH slightly toward the isoelectric point of dairy proteins, tightening the emulsion and amplifying the classic New York-style cheesecake tang.

Storage & Prep Guidelines

  • Refrigeration: Store in an airtight glass or plastic container in the refrigerator for up to 4 days. Stir gently if minor liquid separation occurs over time.

  • Freezing: Portion into freezer-safe jars and freeze for up to 1 month. Thaw overnight in the refrigerator before serving for an ice-cream-like consistency.
