1.Prep the Ingredients :Prepare the produce.

Wash the fresh jalapeño peppers thoroughly and slice off the stems. Chop the onion until you have 1/2 cup, and finely mince 4 cloves of garlic.

2.Simmer the Mixture :Softening and combining flavors.

In a saucepan over medium heat, combine the jalapeño peppers, chopped onion, minced garlic, and white vinegar. Bring the mixture to a gentle simmer and cook for about 10 to 15 minutes, or until the peppers and onions are soft.

3.Blend the Sauce :Achieving desired consistency.

Carefully transfer the cooked mixture into a blender or food processor. Blend on high speed until completely smooth. For a thinner sauce, add a splash of water or additional vinegar; for a chunkier salsa-style texture, pulse to your preference.

4.Bottle & Chill :Cooling and storage.

Allow the hot sauce to cool completely to room temperature. Pour the sauce into a clean, airtight glass jar or hot sauce bottle. Store in the refrigerator for up to 1 month.

Tips & Variations

Spice Control: For a milder sauce, remove the seeds and white ribs from half (or all) of the jalapeños before cooking. For maximum heat, keep all seeds intact.

  • Add Citrus: Squeeze in fresh lime juice after blending for an extra burst of brightness and acid.

  • Herb Infusion: Blend in a small handful of fresh cilantro for a green, herbaceous flavor profile.

  • Safety First: Wear disposable gloves when handling and chopping 15 jalapeño peppers to avoid capsaicin burn on your hands or eyes.
