1.Prepare the Pretzels :

Place the mini pretzels in a large bowl or resealable bag. Crush them gently with a rolling pin into coarse pieces—keep distinct crunchy fragments and avoid turning them into fine powder.

2.Mix Peanut Butter & Sugar :

In a separate bowl, stir the creamy peanut butter and powdered sugar together until smooth and well combined.

3.Combine Pretzels & Peanut Butter :

Add the crushed pretzels to the peanut butter mixture. Stir gently until all pretzel pieces are evenly coated. (Tip: Refrigerate the mixture for 10–15 minutes if it feels too soft to shape).

4.Form and Chill Clusters :

Line a baking sheet with parchment paper. Using a spoon or small cookie scoop, drop rustic mounds of the mixture onto the tray. Refrigerate while preparing the chocolate.

5.Melt the Chocolate :

Place chocolate chips (and optional coconut oil) in a microwave-safe bowl. Heat in 15–20 second intervals, stirring thoroughly between rounds, until melted and completely smooth.

6.Coat and Decorate :

Spoon or drizzle the melted chocolate over each chilled cluster, covering completely or leaving some peanut butter visible. Immediately garnish with flaky sea salt, chopped peanuts, or sprinkles while the chocolate is soft.

7.Chill to Set :

Refrigerate the clusters for about 30 minutes until the chocolate shell is fully hardened. Serve cold or at room temperature.

Chef’s Tips & Recipe Variations

Ingredient Science Note: Standard commercial peanut butter works best here. Natural peanut butter releases excess oils that soften the mixture, making clusters greasy and harder to hold their shape.

  • Dipping & Melt Protection: Melt chocolate slowly in brief microwave bursts. Overheating causes chocolate to seize, turn grainy, and lose its glossy finish.

  • Dark or White Chocolate Swaps: Use dark chocolate chips for a less-sweet, intense cocoa bite, or drizzle melted white chocolate over top for visual contrast.

  • Storage & Freezing: Store in an airtight container with parchment paper between layers for up to 1–2 weeks in the fridge. Freeze in a sealed container for up to 3 months.
