Our old neighbor baked this exact dish for every late summer porch gathering since 1962, well before we tracked carbohydrates. Using only 3 items, these savory squares are always the first empty

Ingredients

1 pound bacon, cooked crisp and crumbled

8 large eggs
2 cups shredded cheddar cheese

Directions

1. Preheat the oven to 375°F and lightly grease an 8-inch square baking dish or small casserole dish.

2. In a medium bowl, whisk the eggs until fully blended, then stir in the crumbled bacon and 1 1/2 cups of the shredded cheddar cheese.

3. Pour the mixture into the prepared baking dish and spread it into an even layer. Sprinkle the remaining 1/2 cup cheddar evenly over the top.

4. Bake for 25 to 30 minutes, or until the center is set and the top is golden brown around the edges.

5. Let the bake rest for 5 to 10 minutes before slicing into squares and serving warm.

Variations & Tips

For picky eaters: Cut the squares small and serve them as hand-held bites for breakfast or snack time. If someone in the family prefers a milder flavor, use Monterey Jack instead of sharp cheddar.

Make-ahead tip: Cook and crumble the bacon a day ahead, then store it in the refrigerator so assembly is extra fast. You can also bake the whole dish ahead and reheat individual squares in the microwave or a low oven.

Easy add-in idea: If you do not need to keep it strictly to three ingredients, a spoonful of chopped green onion or a pinch of black pepper adds a little extra flavor without much extra work.

Baking tip: Watch the center closely near the end of baking time. You want it just set so the squares stay juicy and tender instead of dry.
