1.Preheat and Prepare Pan :

Preheat your oven to 350°F / 175°C. Grease a 9×5-inch loaf pan or line it with parchment paper for easy loaf removal.

2.Whisk Dry Ingredients :

In a medium bowl, whisk together 1 ½ cups flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger until evenly blended.

3.Mix Wet Ingredients :

In a large bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until completely smooth.

4.Combine Batter :

Gradually pour the dry mix into the wet ingredients, stirring gently with a spatula just until incorporated. Do not overmix. Fold in chopped nuts if using.

5.Make Streusel Topping :

In a small bowl, combine ½ cup flour, ¼ cup brown sugar, and 1 tsp cinnamon. Cut in the cold cubed butter using your fingers or a pastry cutter until crumbly. Stir in the rolled oats.

6.Assemble and Bake :

Pour the pumpkin batter into the prepared loaf pan and spread evenly. Sprinkle the streusel topping over the batter in an even layer. Bake at 350°F / 175°C for 55 to 65 minutes, until a toothpick inserted into the center comes out clean. (Note: If the streusel browns too quickly near the end, tent loosely with aluminum foil for the final 15 minutes).

7.Cool and Slice :

Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Food Science & Baking Tips

Streusel Sink Prevention: If streusel toppings tend to sink into quick breads, your batter may be too thin or the butter too warm. Keeping the butter cold and gently placing the streusel on top without pressing it down ensures it bakes into a crisp upper crust.

  • Gluten Control: Overmixing quick bread batter activates gluten proteins, resulting in a tough texture and heavy crumb rather than a tender, soft slice. Mix only until dry flour disappears.

  • Flour Measurement: Always spoon flour into measuring cups and level off with a straight edge rather than scooping directly from the bag to avoid packing in excess flour.

  • Storage Instructions: Store wrapped tightly in plastic wrap at room temperature for up to 3 days or in the refrigerator for up to 1 week. To freeze, wrap the cooled loaf in plastic and aluminum foil for up to 3 months.

Variations & Substitutions

  • Muffin Adaptation: Divide batter into a lined 12-cup muffin tin, top with streusel, and bake at 350°F / 175°C for 20–25 minutes.

  • Dairy-Free / Vegan Options: Use melted coconut oil in place of butter for the streusel and replace eggs with flax eggs (2 tbsp flax meal + 6 tbsp water).

  • Add-ins: Fold in ½ cup of dark chocolate chips, dried cranberries, or diced apples for extra texture.
