White Vinegar or Apple Cider Vinegar 1 cup (240 ml) Base acidity for the brine
Water 1 cup (240 ml) Balances the acidity
Sugar 1–2 tbsp Counterbalances sharpness
Kosher Salt 1.5 tbsp Draws out moisture and seasons
Pickling Spice / Whole Black Peppercorns 1 tbsp Adds aromatic depth
Garlic Cloves 2–3 cloves Smashed for subtle garlic notes

Preparation Steps

1.Prepare the Vegetables :Wash and slice all ingredients uniformly.

Wash all produce thoroughly. Thinly slice the cucumbers and red onions into uniform rounds. Julienne or slice the bell peppers into thin strips to fit easily inside the jar.

2.Pack the Jar :Layer for visual appeal.

In a clean, heat-safe glass quart jar, tightly pack the sliced cucumbers, peppers, and red onions, alternating layers to distribute colors evenly. Tuck the smashed garlic cloves in between the layers.

3.Make the Brine :Dissolve salt and sugar.

In a small saucepan, combine vinegar, water, sugar, salt, and pickling spices (or peppercorns). Bring to a simmer over medium heat, stirring until the salt and sugar are completely dissolved. Remove from heat.

4.Pour and Seal :Submerge the vegetables completely.

Carefully pour the hot brine over the packed vegetables in the jar, ensuring everything is completely submerged under the liquid. Leave about 1/2 inch of headspace at the top.

5.Chill and Serve :Allow flavors to meld.

Let the jar cool at room temperature for 30 minutes. Secure the lid tightly and place the jar in the refrigerator. Allow to chill for at least 1 to 2 hours before serving; optimal flavor develops after 24 hours.

Pro Tip: Thinly sliced vegetables absorb brine faster, making them ready to eat in as little as 1 hour. For an extra spicy kick, add sliced jalapeños or red pepper flakes to the brine!
