1.Prepare the Rub :

In a small bowl, whisk together the olive oil, minced garlic, kosher salt, smoked paprika, dried thyme, black pepper, onion powder, and Worcestershire sauce until a smooth paste forms.

2.Season and Wrap the Beef :

Pat the sirloin roast thoroughly dry with paper towels. Rub the garlic-herb paste over all sides of the meat. Lay bacon slices slightly overlapping on a cutting board, place the seasoned sirloin on top, and wrap the bacon tightly around the roast (secure with wooden toothpicks if needed).

3.Sear (Optional Step for Depth) :

Heat a large skillet over medium-high heat. Carefully sear the bacon-wrapped roast for 2 minutes per side until the bacon begins to brown and render.

4.Assemble in Slow Cooker :

Place sliced onions, carrots, or mushrooms at the bottom of a 5–6 quart slow cooker. Pour in ½ cup low-sodium beef broth. Place the bacon-wrapped sirloin on top of the vegetables so it rests mostly above the liquid layer.

5.Cook Low and Slow :

Cover and cook on LOW for 4 to 6 hours. Insert an instant-read thermometer into the thickest part of the roast to check doneness—target an internal temperature of 145°F / 63°C followed by a 3-minute rest.

6.Crisp the Bacon (Optional) :

Transfer the cooked roast to a foil-lined baking sheet. Broil under high heat for 3 to 5 minutes, watching closely, until the bacon renders crispy and golden brown.

7.Rest and Slice against the Grain :

Transfer the sirloin to a cutting board and tent loosely with foil for 10 to 15 minutes. Slice perpendicular to the grain into thin rounds and serve with strained pan juices or homemade gravy.

Science & Chef’s Tips

Lean Cut Management: Sirloin is a lean muscle cut with minimal intramuscular fat marbling. Cooking on LOW and taking the roast out as soon as it reaches an internal temperature of 145°F / 63°C prevents protein fibers from over-contracting and squeezing out essential moisture.

  • Preventing Soggy Bacon: Keep the roast elevated above the liquid line using an onion bed or vegetable base. Submerging the roast prevents the bacon from rendering properly.

  • Slicing Technique: Always slice beef perpendicular to the muscle grain. Cutting against the grain shortens the meat fibers, ensuring a tender, melt-in-your-mouth bite.

  • Quick Gravy: Strain the remaining slow cooker liquid into a saucepan, bring to a simmer over medium heat, and whisk in a cornstarch slurry (1 tbsp cornstarch mixed with 2 tbsp cold water) until glossy and thickened
