1.Make the Dough :Combine wet and dry elements.

In a large bowl, whisk together the plain yogurt, egg, salt, and vegetable oil. Add the flour and baking powder, stirring until a cohesive dough forms. Knead gently for 3 to 5 minutes until smooth. Cover and let rest for 30 minutes.

2.Mix the Filling :Prepare the cheese core.

In a separate bowl, combine the shredded mozzarella and crumbled white cheese. Divide the cheese mixture into 6 equal portions and roll them into tight balls.

3.Shape & Stuff :Enclose the filling.

Divide the rested dough into 6 equal portions. Roll each dough ball into a flat circle. Place a cheese ball in the center, gather the edges over the filling, and pinch firmly to seal. Gently flatten the stuffed ball with a rolling pin into a round disc about 1/2-inch thick.

4.Cook the Flatbreads :Pan-fry to golden perfection.

Heat a dry skillet over medium heat. Place a flatbread in the skillet and cook for 2 to 3 minutes per side until golden brown spots appear and the bread puff up slightly.

5.Brush & Serve :Finish with richness.

Remove from heat and immediately brush both sides with melted butter. Stack the warm flatbreads on top of each other to keep them soft and tender before serving.

Baker’s Tip: Stacking cooked flatbreads under a clean kitchen towel keeps the steam trapped, ensuring the dough remains soft and pliable while keeping the cheese warm and gooey inside.
