1.Preheat and Prep Equipment :

Preheat your oven to 400°F / 200°C. Line a large baking tray with aluminum foil and place an oven-safe wire rack on top.

2.Season the Wings :

In a large bowl, toss the chicken wings with olive oil, salt, black pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper until every piece is coated.

3.Bake Until Crispy :

Arrange the wings in a single layer on the wire rack. Bake for 40 to 45 minutes, flipping them halfway through, until crispy and golden brown.

4.Prepare Garlic Butter Sauce :

While the wings bake, melt the butter in a small saucepan over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

5.Simmer Sauce :

Stir in the hot sauce, soy sauce (or coconut aminos), apple cider vinegar, and chili flakes. Simmer for 3 to 4 minutes, stirring occasionally, until slightly thickened.

6.Toss and Caramelize :

Transfer the baked wings to a large bowl, pour the sauce over them, and toss to coat. Return wings to the wire rack and broil for 3 to 5 minutes to caramelize the sauce.

7.Garnish and Serve :

Sprinkle with fresh chopped parsley and serve hot.

Chef’s Tips & Food Science

The Wire Rack Trick: Elevating the wings on an oven-safe wire rack allows hot air to circulate underneath the chicken, preventing bottom sogginess and rendering out subcutaneous fat for ultra-crispy skin without deep frying.

  • Extra Crunch Boost: Toss the raw seasoned wings with 1–2 teaspoons of baking powder (aluminum-free) before baking to alter skin pH and create a lighter, extra-shatteringly crisp crust.

  • Heat Control: Omit or reduce cayenne and chili flakes for a milder garlic-butter profile, or add a squeeze of fresh lime juice to brighten the spice.

  • Pairings & Dips: Serve with classic celery sticks alongside cool ranch or blue cheese dressing to balance the spicy garlic heat while keeping net carbs low.
