Creamy scrambled eggs are a simple breakfast that can feel surprisingly special. The secret is gentle heat, constant attention, and taking the eggs off the heat while they are still slightly soft.

This recipe creates tender, creamy curds without requiring complicated ingredients.

Ingredients

  • 4 large eggs
  • 1 tablespoon unsalted butter
  • 1 tablespoon heavy cream or whole milk, optional
  • 1/4 teaspoon salt
  • Freshly ground black pepper, to taste
  • Fresh chives, optional

How to Make Creamy Scrambled Eggs

1. Whisk the Eggs

Crack the eggs into a bowl and whisk until the yolks and whites are completely combined.

Add the salt and, if using, the cream or milk. Whisk briefly until smooth.

2. Melt the Butter

Place a nonstick skillet over low to medium-low heat.

Add the butter and let it melt gently without allowing it to brown.

3. Cook the Eggs Slowly

Pour the eggs into the skillet.

Allow them to sit for a few seconds, then use a silicone spatula to gently move the eggs across the pan.

Continue stirring and folding slowly. The eggs should form small, soft curds rather than large, firm pieces.

4. Remove From the Heat Early

When the eggs look mostly set but still slightly glossy and soft, remove the skillet from the heat.

The residual heat will continue cooking them for a short time, so taking them off the stove before they become completely firm helps keep them creamy.

5. Season and Serve

Taste the eggs and adjust the seasoning if necessary.

Add freshly ground black pepper and chopped chives if desired.

Serve immediately with toast, roasted vegetables, or your favorite breakfast sides.
