This traditional pie is easy to make with simple pantry ingredients and delivers a wonderful combination of sweetness, cinnamon, and a hint of tangy lemon. Whether you’re preparing dessert for a holiday dinner or simply craving a nostalgic homemade treat, this raisin pie is sure to impress.

Ingredients

For the Pie Crust

  • 2 unbaked 9-inch pie crusts, homemade or store-bought
  • 1 tablespoon butter, for the filling
  • 1 egg, beaten (optional, for brushing the crust)

For the Raisin Filling

  • 2 cups raisins
  • 1½ cups water
  • ¾ cup granulated sugar
  • 3 tablespoons cornstarch
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter

Instructions

Step 1: Prepare the Raisins

Place the raisins and water in a medium saucepan. Bring the mixture to a gentle boil over medium heat, then reduce the heat and simmer for approximately 5 minutes.

This softens the raisins and helps release their natural sweetness into the cooking liquid.

Step 2: Make the Filling

In a small bowl, combine the sugar, cornstarch, salt, cinnamon, and nutmeg.

Gradually stir the dry mixture into the simmering raisins, mixing continuously to prevent lumps from forming.

Continue cooking for 2–4 minutes, stirring frequently, until the filling becomes thick and glossy.

Step 3: Add the Flavorings

Remove the saucepan from the heat. Stir in the lemon juice, vanilla extract, and butter until everything is well combined.

Allow the filling to cool for about 15–20 minutes. A slightly cooled filling is easier to work with and helps prevent the bottom crust from becoming soggy.

Step 4: Prepare the Pie Crust

Preheat your oven to 400°F (200°C).

Place one pie crust into a 9-inch pie plate, gently pressing it into the bottom and sides without stretching the dough.

Pour the cooled raisin filling into the crust and spread it evenly.

Step 5: Add the Top Crust

Cover the filling with the second pie crust. Trim the excess dough and crimp the edges together to seal.

Cut several small slits into the top crust to allow steam to escape during baking.

If desired, brush the top with beaten egg for a beautiful golden finish.

Step 6: Bake the Pie

Place the pie on a baking sheet to catch any filling that bubbles over.

Bake at 400°F (200°C) for 15 minutes. Reduce the oven temperature to 350°F (175°C) and continue baking for another 25–35 minutes, or until the crust is golden brown.

If the edges brown too quickly, cover them loosely with aluminum foil.

Step 7: Cool Before Slicing

Remove the pie from the oven and allow it to cool for at least 2–3 hours before slicing.

Cooling gives the filling time to set, making it easier to cut neat slices without the filling running out.

Serve at room temperature or slightly warm.
