1. Bake the Puff Pastry

Preheat your oven to 400°F (200°C).

Place the puff pastry sheets on baking trays lined with parchment paper. Prick the pastry lightly with a fork to help prevent excessive puffing.

Cover each sheet with another piece of parchment paper and place a baking tray on top. This helps keep the pastry relatively flat while it bakes.

Bake for about 15–20 minutes, or until the pastry is golden and crisp.

Remove the trays and allow the pastry to cool completely.

2. Prepare the Vanilla Custard

Pour the milk and cream into a saucepan and heat gently until warm. Do not let the mixture come to a full boil.

In a separate bowl, whisk together the sugar, egg yolks, cornstarch, and salt until smooth.

Slowly pour some of the warm milk mixture into the egg mixture while whisking constantly.

Return everything to the saucepan and cook over medium-low heat, stirring continuously.

After a few minutes, the mixture should become thick and creamy.

Remove it from the heat and stir in the butter and vanilla extract.

Transfer the custard to a bowl and cover the surface directly with plastic wrap to prevent a skin from forming. Allow it to cool until it is no longer hot.

3. Assemble the Vanilla Slice

Place one sheet of cooled puff pastry on a flat surface or serving tray.

Spread the vanilla custard evenly over the pastry, creating a smooth layer.

Place the second pastry sheet on top and gently press it down.

Refrigerate the dessert for at least 4 hours, preferably overnight. This allows the custard to firm up and makes slicing much easier.

4. Finish and Serve

Just before serving, dust the top lightly with powdered sugar.

Use a sharp knife to cut the vanilla slice into individual portions.

For cleaner cuts, chill the dessert thoroughly and wipe the knife between slices.

Tips for the Best Vanilla Slice

Let the pastry cool completely. Warm pastry can soften the custard and make the layers difficult to assemble.

Cook the custard slowly. Stir continuously while it thickens to help prevent lumps and scorching.

Chill before slicing. This is one of the most important steps. Giving the dessert enough time in the refrigerator allows the custard to set properly.

Keep the pastry crisp. If you want the top layer to remain easier to cut, you can lightly score it into portions before placing it over the custard.

Can You Make It Ahead?

Yes. Vanilla slice is particularly convenient as a make-ahead dessert. Once assembled, keep it covered and refrigerated until ready to serve.

For the best texture, enjoy it within a couple of days. The pastry will gradually soften as it sits in contact with the custard, but the dessert will still be creamy and delicious.

Final Thoughts

This creamy vanilla slice brings together two textures that work beautifully together: crisp, flaky puff pastry and smooth vanilla custard.

With a few simple ingredients and some patience while the dessert chills, you can make an elegant homemade treat that’s perfect for sharing with family and friends.
