1.Prep the Meat :

Remove the lamb chops from the refrigerator 15–20 minutes prior to cooking. Pat thoroughly dry on both sides with paper towels.

2.Season Generously :

Rub the chops with olive oil and press the salt, black pepper, smoked paprika, and dried thyme firmly onto both sides.

3.Heat Pan and Sear Side One :

Place a heavy cast-iron skillet over medium-high heat until hot. Add the lamb chops in a single layer without overcrowding (cook in batches if needed). Sear undisturbed for 3 to 4 minutes until a deep golden-brown crust forms.

4.Flip and Sear Side Two :

Flip the chops and sear the second side for another 2 to 3 minutes.

5.Baste with Garlic Herb Butter :

Reduce heat to medium-low. Add butter, minced garlic, fresh rosemary, parsley, and red pepper flakes. Tilt the skillet slightly and repeatedly spoon the bubbling butter over the chops for 1 to 2 minutes until reaching desired doneness.

6.Rest and Finish Sauce :

Transfer chops to a plate to rest for 5 minutes. Stir the fresh lemon juice into the remaining garlic herb butter left in the pan, then spoon the warm pan juices over the rested chops before serving.

Chef’s Tips & Science Insights

Maillard Reaction & Moisture Control: Removing surface moisture with paper towels is critical. Water turns to steam on contact with a hot pan, preventing the temperature from rising high enough to create the crispy, caramelized Maillard crust.

  • Prevent Burning Garlic: Always add garlic during the final butter-basting stage rather than the initial sear; high skillet heat will char minced garlic and turn it bitter.

  • Storage & Reheating: Store leftovers in an airtight container for up to 3–4 days in the fridge. Reheat gently in a covered skillet over low heat with a small knob of butter or broth to prevent drying out.
