1.Combine Ingredients in Pan :

In a medium saucepan, combine the pumpkin puree, apple cider, brown sugar, and maple syrup. Whisk in the cinnamon, ginger, nutmeg, cloves, allspice, and salt until smooth and uniform.

2.Bring to Simmer :

Place the saucepan over medium heat and bring the mixture to a gentle bubble, stirring frequently with a heat-resistant spatula.

3.Simmer Low and Slow :

Reduce heat to low and simmer for 20 to 30 minutes, stirring occasionally to prevent scorching at the bottom. The mixture will darken into a deep orange hue and thicken into a velvety, spreadable consistency.

4.Off-Heat Additions :

Remove the saucepan from the heat. Stir in the vanilla extract (if using) and let the pumpkin butter cool completely to room temperature.

5.Jar and Store :

Transfer the cooled spread into an airtight glass jar or container. Refrigerate immediately.

Food Science & Preservation Tips

Canning Safety Note: Commercial pumpkin butter cannot be safely processed using home water-bath or pressure-canning techniques because of its high density and variable pH levels. Always store homemade pumpkin butter refrigerated or frozen.

  • Preventing Scorching: Pumpkin puree is thick and catches easily on saucepan bottoms. Keep heat low once simmering and use a wide rubber spatula to scrape the bottom during reduction.

  • Storage Limits: Store in an airtight container in the refrigerator for up to 2 weeks, or freeze in freezer-safe jars (leaving ½-inch headroom for expansion) for up to 3 months. Thaw overnight in the fridge before serving.

  • Custom Flavor Additions: Stir in a splash of bourbon during the last minute of simmering or add a dash of fresh lemon juice for a subtle acid lift
