1.Preheat and Prepare Pan :

Preheat your oven to 375°F / 190°C. Generously grease a 12-cup muffin tin with nonstick cooking spray or butter to prevent sticking.

2.Mix the Base Batter :

In a large bowl, whisk together the Bisquick mix, milk, and eggs until smooth and fully blended.

3.Fold in Fillings :

Gently fold in the cooked crumbled sausage, shredded cheddar cheese, and optional diced bell peppers and onions until evenly distributed. Season with salt and black pepper to taste.

4.Fill Muffin Cups :

Divide the batter evenly into the prepared muffin tin, filling each cup about two-thirds full to allow room for the muffins to rise.

5.Bake to Golden Brown :

Bake for 15 to 20 minutes, or until the muffin tops are golden brown and a toothpick inserted into the center comes out clean.

6.Cool and Serve :

Allow the muffins to cool in the pan for 5 minutes before gently removing them. Serve warm.

Chef’s Tips & Cooking Techniques

Baking Science Note: Avoid overmixing the batter once the Bisquick and liquids combine. Excess stirring over-develops gluten, which leads to dense, rubbery muffins rather than light, tender bites.

  • Finely Dice Veggies: If adding peppers or onions, chop them finely so they soften evenly during the short baking window without making the muffin structure heavy.

  • Flavor Kick: Add 1–2 tablespoons of finely diced jalapeños or a pinch of crushed red pepper flakes to the batter for a spicy kick.

  • Storage & Reheating: Store leftover muffins in an airtight container in the refrigerator for up to 4 days. Reheat individual muffins in the microwave for 15–20 seconds or warm in a toaster oven.
